Our 2011 cellar release shiraz is at its prime drinking age having 7 years to add depth and complexity to the wine, showing aromas of black cherry, liquorice, leather and a slight Smokey meatiness. Rich dark plum, black cherry and liquorice flavours are wrapped up in a supplely textured mouthfeel with smoked meat characters and hints black pepper. Excellent concentration and richness with solidly built but velvety tannins.

Vintage overview | 2011 was a tough growing season for most of Victoria, we had a very wet spring and summer this meant that there was lots of disease pressure in the vineyard and a 20% loss of fruit. We were a lot luckier than most of Victoria and the fruit we were able to get off shows lots of spice and excellent tannin levels. |

Winemaking overview | Handpicked, 90% crushed and destemmed 10% whole bunch, fermented in stainless steel tanks using only wild yeasts. Pumped over once daily for the first week then gently hand plunged once daily from then on. Basket pressed after 31 days and aged in old French oak for 20 months. |
